Gaiwan, chahai
Gaiwan and Chahai - the most classic "couple" for Chinese tea drinking.
Gaiwan is used to make tea. It consists of three objects - a saucer stand, a lid and the brewing bowl itself. The Chinese call gaiwan the Cup of the Three Foundations, where the saucer is the earth on which we stand, the lid is the sky, and the cup itself is a vessel that combines heaven and earth through tea. That's so beautiful :-)
Making tea in gaiwan is easy. Warm it with hot water, place the tea so that it fills the gaiwan to a third of the volume, leave for 10-30 seconds, then drain the infusion into the tea, slightly moving the lid. If the tea is small, you can use a sieve.
Chahai is an intermediate container between gaiwan and bowls. Its purpose is to even the tea to taste and aroma, so that all participants in the tea party drink the same tea. After all, if you pour tea directly from gaiwan while it continues to brew, then the first guest will get the lightest drink, and the last - the strongest. Not fair. The Chinese say that before tea everyone is equal and call the chahai the Cup of Justice.
From teahouse tea is poured into bowls. Thus, tea is brewed many times, receiving maximum pleasure from each small bowl.
