Clay teapots
Clay teapots, especially teapots made of Yixing clay, are usually small in volume and are designed for the most correct brewing of tea - by spilling. A lot of tea, little water, infusion time about 30 seconds. These teapots allow you to brew tea many times and get the most out of it. Tea brewed in this way is not only tasty and aromatic, but also gives bright tea states. Of course, this tea will take time.
Clay teapots differ in shape, volume, type of clay, wall thickness, type of sieve. The classic Yixing teapot sieve has seven holes. Teapots with a "nest" sieve are especially appreciated - this means that the holes inside the teapot are on a convex surface - this prevents tea leaves from getting into the spout.
Yixing teapots can be with or without a pattern. Usually teapots are decorated with hieroglyphs, images of birds, sakura or plum blossoms, images of animals. Such images symbolize happiness, vitality, prosperity. Teapots without a pattern are universal and can be combined with any utensils.
The main quality criterion for the Yixing teapot is its ability to hold a water lock. That is, if you pinch the hole in the lid with your finger, the tea will not pour from the spout. And vice versa - if you pinch the spout with your finger - then the lid from the inverted kettle will not fall.
Clay retains heat well, but if your kettle is not covered with enamel on the inside, then you need to have a separate kettle for each tea. Clay has a porous structure, so it absorbs aroma. Tea gourmets believe that the "well-mannered" (that is, soaked in tea) Yixing teapot is able to turn water into tea :-)
